Asian pulled chicken salad

Shred some leftover roast chicken (you can use a grilled breast if you like), thinly slice half a red cabbage, three carrots, a bunch of spring onions, red chilli (to taste) and a bunch coriander. Toss this all together with some crushed roast peanuts, a glug of hoisin sauce or fish sauce and a table spoon of sesame oil. Easy!

Tuna sweetcorn burgers

In a bowl, mix fresh white breadcrumbs, a drained can of sweetcorn, two drained cans of tuna, a handful of grated cheddar and finely chopped spring onions. Work it with your hands or a fork, then mix in a beaten egg. Then all that’s left to do is form patties and fry them before serving in a bun with some salad.
